How to Make Summer Fruit Breakfast Bake
- Start by preheating your oven to 350°F (175°C).
- In a mixing bowl, combine quinoa, oats, brown sugar, cinnamon, and salt. Stir gently until blended.
- In another bowl, mash the bananas until smooth. Stir in the milk, eggs, and vanilla extract.
- Pour the banana mixture into the bowl of dry ingredients and mix well.
- Gently fold in the peaches and strawberries.
- Pour the mixture into a greased baking dish and spread it out evenly.
- If desired, sprinkle coconut flakes on top.
- Place the dish in the preheated oven and bake for 30-35 minutes.
