  • 12 oz short pasta (any shape) such as rigatoni or bow tie
  • 3 oz baby spinach packed with nutrients
  • 10 oz cherry tomatoes halved
  • 8.5 oz sun-dried tomatoes in oil oil drained
  • 0.5 piece red onion small diced
  • 0.5 cup shredded parmesan shaved or grated
  • 8 oz mozzarella pearls
  • 0.33 cup chopped basil fresh
For the Dressing
  • 0.33 cup extra virgin olive oil
  • 0.33 cup oil drained from sun-dried tomatoes
  • 2 Tbsp balsamic vinegar regular or white
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp pepper
  • 0.5 tsp salt

Method
 

Preparation Steps
  1. Cook the pasta according to the package instructions until al dente. Once cooked, drain and set aside to cool.
  2. Combine in a large bowl the cooled pasta, baby spinach, halved cherry tomatoes, sun-dried tomatoes, diced red onion, shredded parmesan, mozzarella pearls, and chopped basil.
  3. Whisk together the olive oil, oil from the sun-dried tomatoes, balsamic vinegar, minced garlic, Italian seasoning, pepper, and salt in a separate bowl.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Adjust the seasoning, tasting for a perfect balance of flavors.
