  • 1 cup Water No substitutions needed
  • 3 tablespoons Rice Vinegar Can substitute with apple cider vinegar
  • 1 tablespoon Sugar Optional for low-sugar diets
  • 1 teaspoon Salt Adjust to taste
For the Cones
  • 12 pieces Wonton Wrappers Use gluten-free for gluten-free version
For the Filling
  • 1 medium Avocado Can substitute with mango
  • 1 medium Cucumber Bell peppers are an alternative
  • 1 cup Cooked Shrimp Diced tofu makes for a great vegetarian option
  • 3 tablespoons Mayonnaise Use Greek yogurt as a lighter substitute
  • 1 teaspoon Sriracha Optional for spice

Method
 

Preparation Steps
  1. Rinse sushi rice under cold water until clear. Combine it with water in a saucepan for cooking.
  2. Bring the rice and water to a boil, then reduce heat, cover, and simmer for 18-20 minutes. Let the rice sit covered for 10 minutes.
  3. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has cooled, gently fold this mixture into it.
  4. Preheat the oven to 375°F. Spray a muffin tin and press wonton wrappers into the cups to form cones. Bake for 8-10 minutes until golden brown and crispy.
  5. In a bowl, combine chopped shrimp, mayonnaise, and sriracha. Mix thoroughly.
  6. Fill each crispy wonton cone with sushi rice, followed by the shrimp mixture, avocado, and cucumber. Garnish with sesame seeds and chopped green onions. Serve with soy sauce!
