Preparation Steps
- Preheat the oven according to your pie crust instructions.
- Prepare the pie crust by rolling it out if homemade, or fit the ready-to-bake crust into your pie dish.
- Cook the baby carrots in boiling water until tender, about 10-15 minutes, then purée until smooth.
- Combine carrot purée, evaporated milk or cream, maple syrup, beaten eggs, vanilla, cinnamon, nutmeg, ginger, and salt in a mixing bowl; whisk well.
- Pour the filling into the prepared pie crust, spreading evenly.
- Bake until filling is set and slightly golden, roughly 35-40 minutes.
