Preparation Steps
  1. Preheat the oven according to your pie crust instructions.
  2. Prepare the pie crust by rolling it out if homemade, or fit the ready-to-bake crust into your pie dish.
  3. Cook the baby carrots in boiling water until tender, about 10-15 minutes, then purée until smooth.
  4. Combine carrot purée, evaporated milk or cream, maple syrup, beaten eggs, vanilla, cinnamon, nutmeg, ginger, and salt in a mixing bowl; whisk well.
  5. Pour the filling into the prepared pie crust, spreading evenly.
  6. Bake until filling is set and slightly golden, roughly 35-40 minutes.
  7. Cool on a wire rack for at least 15-20 minutes before slicing.
