Preparation

- Peel and cube the sweet potatoes, and core and slice the apples.
- Toss the sweet potatoes and apple slices in a large bowl with olive oil, maple syrup, and cinnamon.
- Spread the mixture evenly on a parchment-lined baking sheet.
- Roast for 25-30 minutes, stirring halfway through.
- Sprinkle chopped nuts over the mixture during the last 5 minutes of baking if using.
