Ingredients
  

For the Pinwheels
  • 1 sheet Puff Pastry Dough homemade or store-bought
  • 3 tablespoons Unsalted Butter or use olive oil
  • 2 cloves Tender Garlic chopped
  • 1 cup Aged Cheddar grated
  • 1 tablespoon Thyme or swap with rosemary
  • 1/2 teaspoon Salt adjust to taste
Optional Variations
  • 2 cloves Roasted Garlic for a sweeter touch
  • 1 cup Different Cheeses e.g. Gruyere, Parmesan, or mozzarella

Method
 

Preparation
  1. In a small bowl, melt the butter with chopped tender garlic, thyme, and salt in the microwave for about 30 seconds.
  2. Unroll the pastry dough on a lightly floured surface and brush it evenly with the melted butter mixture.
  3. Grate the aged cheddar and sprinkle it evenly over the brushed pastry.
  4. Starting from the longer side, roll the pastry tightly into a cylinder.
  5. With a sharp knife, cut the roll into 1 cm thick slices and place these slices on a parchment-lined baking tray.
  6. Take the reserved butter and brush the tops of the pinwheels lightly.
  7. Preheat your oven to 200°C (400°F) and bake the pinwheels for about 10 minutes or until they are golden brown and flaky.
