- Pat the Chops dry with a paper towel to achieve that delightful golden crust when searing!
- Mix together salt, pepper, garlic powder, paprika, and thyme in a small bowl. Rub this herb blend all over the pork chops.
- Lightly dredge the seasoned chops in flour (or cornstarch for gluten-free), shaking off any excess.
- Heat olive oil in a large skillet over medium-high heat, then sear the pork chops for about 3-4 minutes on each side.
- In the same skillet, add butter or oil if necessary. Stir in 1-2 tablespoons of the dredging flour and cook for about 1 minute.
- Slowly whisk in chicken broth, scraping any browned bits from the skillet. Add heavy cream and Worcestershire sauce, and simmer until it thickens.
- Lower the heat and add minced garlic, honey, both mustards, vinegar, and thyme. Stir until it thickens, about 2-3 minutes.
- Return the seared pork chops to the skillet and smother them in gravy. Simmer together for 5-7 minutes.
