Ingredients
  

For the Salad
  • 2 fillets Salmon skinless recommended
  • 1 tablespoon Vegetable Oil or olive oil
  • 1 small Onion preferably red
  • 1 cup Cucumber diced
  • 0.5 cup Coriander (Cilantro)
  • 2 stalks Spring Onion (Scallions)
  • 0.25 cup Mint Leaves
  • 1 teaspoon Chili Flakes to taste
  • 1 teaspoon Sea Salt or kosher salt
For the Dressing
  • 1 small Long Red Chili sliced
  • 1 clove Garlic sliced
  • 1 tablespoon Fish Sauce or soy sauce
  • 2 tablespoons Lime Juice freshly squeezed
  • 1 teaspoon Palm Sugar or honey

Method
 

Preparation
  1. Prepare Dressing: In a mortar, combine sliced chili, garlic, and a pinch of salt. Pound into a rough paste and mix with fish sauce, lime juice, and palm sugar.
  2. Sear Salmon: Season salmon with salt. Heat vegetable oil in a frying pan over high heat, add salmon, and cook for 2-3 minutes on each side until cooked through.
  3. Combine Salad: In a bowl, mix onion, cucumber, flaked salmon, coriander, spring onion, and mint. Toss with dressing and adjust seasoning with chili flakes.
