Preparation
- In a bowl, whisk together sweet chili sauce, red curry paste, fish sauce, and lime juice. Generously brush this mixture over the ribs and allow them to marinate in the fridge overnight for maximum flavor.
- In a medium saucepan, combine sweet chili sauce, peanut butter, red curry paste, fish sauce, and lime juice. Heat over medium for 2-3 minutes, stirring until the sauce is smooth and well-blended.
- Place the marinated ribs in your slow cooker, positioning bone side up. Cover and cook on low for 6-8 hours until the ribs are tender and easily pull apart.
- Preheat your broiler. Transfer the cooked ribs to a baking sheet, brushing them generously with half of the prepared BBQ sauce. Broil for 3-5 minutes, watching closely until the sauce bubbles and caramelizes beautifully.
- Sprinkle the ribs with chopped peanuts and cilantro before serving. Don't forget to provide the remaining BBQ sauce on the side for dipping!
