Preparation
- Preheat your oven to 400°F (200°C).
- Slice the red bell peppers into strips and toss them with olive oil, salt, and pepper. Spread the strips on a baking sheet and roast for about 20 minutes.
- Once the peppers are cooled, blend them with garlic and lemon juice until smooth.
- In a skillet, heat some olive oil over medium heat. Season the tilapia fillets with salt and pepper, then cook for 3-4 minutes per side until golden brown.
- Pour the roasted pepper sauce over the cooked tilapia and let it simmer for 1-2 minutes before serving.
- Garnish with fresh basil or parsley if desired.
