  • 2 tablespoons brown sugar or honey/coconut sugar as substitutes
  • 2 tablespoons fresh lime juice for brightness
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • 1 pound chicken (dark meat preferred) or firm tofu for vegetarian
  • 8 pieces skewers soak in water for 30 minutes

Method
 

Marinade Preparation
  1. In a mixing bowl, whisk together fresh ginger, minced garlic, soy sauces, coconut milk, brown sugar, fresh lime juice, salt, and pepper until well combined.
  2. Add chunks of chicken to the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes.
Grilling Process
  1. Thread marinated chicken pieces onto the soaked skewers, leaving space between each for even cooking.
  2. Preheat your grill to medium-high heat and lightly oil the grates.
  3. Grill skewers for 4-5 minutes on each side until charred and the chicken reaches an internal temperature of 74°C/165°F.
  4. Squeeze fresh lime juice over skewers before serving.
