  • 1/2 cup Sweetened Condensed Milk or coconut cream for dairy-free
  • 1/4 cup Powdered Sugar adjust based on sweetness preference
  • 1 tsp Vanilla Extract or coconut extract
  • 1 pinch Salt
For the Coating
  • 1/2 cup Extra Shredded Coconut

Method
 

Instructions
  1. In a large mixing bowl, add the drained crushed pineapple, sweetened shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt. Stir gently until mixed well.
  2. Continue mixing until a sticky dough forms. Ensure the crushed pineapple is well-drained.
  3. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  4. Once chilled, use a tablespoon to scoop out portions of the mixture. Roll each portion into balls.
  5. Roll each ball in extra shredded coconut to coat.
  6. Enjoy immediately or refrigerate until ready to serve.
