  • 1 leaf Bay Leaf
  • 2 teaspoons Fresh Thyme Leaves or dried thyme

How to Make Homemade Beef Stew
  1. Preheat your oven to 325°F.
  2. Season the beef chunks generously with kosher salt and coarsely ground black pepper. Coat lightly in gluten-free all-purpose flour.
  3. Heat olive oil in a large Dutch oven over medium heat. Brown the beef in batches for 3-4 minutes on each side.
  4. Add diced yellow onion, minced garlic, and sliced carrots. Sauté for 2-3 minutes until onions are translucent.
  5. Stir in Yukon Gold potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and fresh thyme. Scrape up browned bits from the pot.
  6. Bring to a gentle simmer, cover the pot, and transfer to the oven.
  7. Cook for 2 to 2.5 hours, stirring occasionally, until beef is fork-tender.
  8. Remove the bay leaf before serving and taste for seasoning. Serve warm.
