How to Make Homemade Beef Stew
- Preheat your oven to 325°F.
- Season the beef chunks generously with kosher salt and coarsely ground black pepper. Coat lightly in gluten-free all-purpose flour.
- Heat olive oil in a large Dutch oven over medium heat. Brown the beef in batches for 3-4 minutes on each side.
- Add diced yellow onion, minced garlic, and sliced carrots. Sauté for 2-3 minutes until onions are translucent.
- Stir in Yukon Gold potatoes, beef broth, tomato paste, Worcestershire sauce, bay leaf, and fresh thyme. Scrape up browned bits from the pot.
- Bring to a gentle simmer, cover the pot, and transfer to the oven.
- Cook for 2 to 2.5 hours, stirring occasionally, until beef is fork-tender.
- Remove the bay leaf before serving and taste for seasoning. Serve warm.
