Ingredients
  

For the Cupcakes
  • 1 cup Soy Milk or almond/oat milk
  • 1 tbsp Apple Cider Vinegar crucial for fluffiness
  • 1 tsp Instant Coffee Granules optional for caffeine-free version
  • 1 cup Apple Puree or unsweetened applesauce
  • 1/2 cup Olive Oil or vegetable/canola oil
  • 2 tsp Vanilla Extract no substitutes recommended
  • 1 1/2 cups Plain Flour can use whole wheat flour
  • 1/2 cup Dutch-Processed Cocoa Powder or regular cocoa powder
  • 1 tsp Baking Soda ensure it’s fresh
  • 1/2 tsp Sea Salt regular salt can substitute
  • 1 cup Caster Sugar or granulated sugar
  • 1/2 cup Light Muscovado Sugar or brown sugar
For the Blackberry Coulis
  • 2 cups Blackberries fresh or frozen
  • 1/4 cup Sugar (for coulis) adjust sweetness as needed
  • 1/2 cup Water or fruit juice for flavor
For the Frosting and Decorations
  • 2 cups Vegan Swiss Meringue Buttercream or store-bought
  • 4 oz Dark Chocolate ensure it’s dairy-free
  • 1/2 cup Fresh Blackberries or other berries for garnish

Method
 

Making the Cupcakes
  1. Prepare Chocolate Skulls: Melt dark chocolate in a microwave-safe bowl or over a double boiler, then pour it into skull molds. Refrigerate until set, about 30 minutes.
  2. Make Vegan Buttermilk: In a small bowl, combine soy milk and apple cider vinegar. Let it sit for about 10 minutes to curdle.
  3. Combine Wet Ingredients: In a large mixing bowl, stir together the curdled soy milk, instant coffee granules, apple puree, olive oil, and vanilla extract until well blended.
  4. Mix Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, sea salt, caster sugar, and muscovado sugar until evenly combined.
  5. Combine Mixes: Gently pour the wet mixture into the dry ingredients and whisk until just combined; avoid over-mixing.
  6. Bake: Distribute batter into cupcake liners, filling each about two-thirds full. Bake at 180°C (356°F) for 22-25 minutes or until a toothpick inserted comes out clean.
  7. Make Coulis Filling: In a saucepan, simmer blackberries, sugar, and water over medium heat for about 12 minutes. Cool and refrigerate once thickened.
  8. Core Cupcakes: Once cooled, use a cupcake corer to cut out centers and fill with cooled blackberry coulis.
  9. Prepare Frosting: Divide vegan buttercream; mix half with leftover coulis and the other half with cocoa powder.
  10. Decorate: Pipe frostings onto each cupcake, top with chocolate skulls and fresh blackberries.
