  • 1/2 cup Wild Mango Balsamic Regular balsamic can be used
  • 1 package Vegan Cookies Use ginger cookies or graham crackers
  • 2 cups Fresh Mangoes Ensure they are firm and ripe
For the Topping

Preparation Steps
  1. Prepare the Mango Curd: In a saucepan, whisk together mango pulp, sugar, and cornstarch slurry over medium heat. Cook until thickened, about 3-5 minutes, then cool and refrigerate until set.
  2. Make the Soak: In a bowl, combine wild mango balsamic, mango pulp, and hot water. Stir well to mix the flavors.
  3. Mix the Cream: In a mixing bowl, beat the vegan cream cheese until fluffy, then add Greek-style vegan yogurt and powdered sugar, mixing until smooth. Blend in half of the chilled mango curd.
  4. Assemble the Tiramisu: Layer cream, dipped cookies, diced mango, and half the cream mixture, then repeat.
  5. Chill: Cover and refrigerate for at least 2 hours, preferably overnight.
  6. Finish: Spread remaining mango curd on top and garnish with fresh mango slices.
