  • 1 lb Ground Beef lean-to-fat ratio of 90/10
  • 1 cup Carrots finely chopped
  • 1 cup Red Bell Pepper finely chopped
  • 1 cup Onion finely chopped
  • 1 cup Celery finely chopped
  • 1 cup Tomato Juice can substitute with V-8 juice
  • 2 tbsp Olive Oil for sautéing veggies
  • 1/2 cup Ketchup or Chili Sauce can use for topping
  • 1 tbsp Spices adjust to taste (e.g., garlic powder, paprika, etc.)
For Topping
  • 1/4 cup Ketchup or Chili Sauce for brushing on top

Method
 

How to Make Veggie Loaded Meatloaf
  1. Preheat your oven to 350°F and generously coat a baking sheet with non-stick spray.
  2. Combine seasoning ingredients in a small bowl and set aside.
  3. Mix ketchup and additional topping spices in a separate bowl; set aside.
  4. Sauté onions, celery, carrots, and bell pepper in olive oil for about 3-4 minutes.
  5. Cool the veggies slightly, then mix them with tomato juice, remaining seasoning, and ground meat.
  6. Form the meat mixture into a loaf shape on the prepared baking sheet.
  7. Brush the topping mixture generously over the top of the loaf.
  8. Bake for 30 minutes, then rotate and continue baking for another 15-20 minutes.
  9. Rest the meatloaf for 10 minutes before slicing.
