  • 1/2 cup Red Onion Finely diced
  • 1 unit Jalapeño Pepper Seeded and finely chopped
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1/4 cup Cilantro Chopped
  • 1/2 teaspoon Salt

Instructions
  1. Start by washing your cherries under cold water, then remove the pits and chop them into small pieces.
  2. In a large mixing bowl, toss together the chopped cherries, red onion, jalapeño, cilantro, and a pinch of salt. Mix gently to combine.
  3. Squeeze freshly squeezed lime juice over the salsa mixture and stir it all together.
  4. Taste your salsa and adjust with extra salt or lime juice according to preference.
  5. Cover the salsa and refrigerate for at least 30 minutes before serving.
