Method
 

Cookie Preparation
  1. Preheat the oven to 400°F (200°C).

  3. Microwave the frozen blueberries for 30 to 45 seconds, then mash with a fork until smooth.
  4. Cream the softened vegan butter and granulated sugar together in a stand mixer until light and fluffy.
  5. Incorporate the cooled, mashed blueberries into the butter mixture.
  6. Gradually add the dry flour mixture into the wet ingredients, combining until a sticky dough forms.
  7. Fold in the white chocolate morsels.
  8. Chill the dough in the freezer for 30 minutes.
  9. Form the dough into 12 balls and place them on a parchment-lined baking sheet.
  10. Bake for about 10 minutes, until the edges are light brown.
