Preparation
- In a mixing bowl, combine ground pork, scallions, garlic, ginger, soy sauce or tamari, sesame oil, chili crisp, rice vinegar, white pepper, and chicken broth or water. Mix well until blended and flavorful.
- Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Ensure you don't overfill; the filling should be compact but not bursting.
- Dip your finger in the bowl of water and moisten the edges of the wrapper. This will help create a tight seal to keep all those delicious flavors inside.
- Fold the wrapper in half to create a half-moon shape and pinch the edges tightly to seal. Give them a good pinch to ensure they hold together during cooking.
- Continue filling and sealing the wrappers until all your filling is used. Don’t worry if some are a bit uneven; they’ll taste just as amazing!
- Cook the dumplings by steaming, boiling, or pan-frying as desired. For a lovely golden color, pan-fry them until crispy and juicy, about 5-7 minutes.
- Serve with extra soy sauce, chili crisp, and garnished with sliced scallions and sesame seeds for an extra flavor kick.

Notes
Keep the filling between 1 tablespoon to avoid overflow. Learn different cooking methods and consider layering dumplings in a baking dish with sauce and cheese for lasagna.
