How to Make Irish Soda Bread Muffins
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin.
  2. In a large bowl, mix the dry ingredients: all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until combined.
  5. Fold in the dried currants and orange zest.
  6. Divide the batter into muffin cups, filling each about 2/3 full.
  7. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
