How to Make Irish Soda Bread Muffins
- Preheat your oven to 375°F (190°C) and prepare a muffin tin.
- In a large bowl, mix the dry ingredients: all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until combined.
- Fold in the dried currants and orange zest.
- Divide the batter into muffin cups, filling each about 2/3 full.
- Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
