How to Make Zero Carb Yogurt Bread
  1. Preheat your oven to 300°F (150°C) and prepare a 4×4 inch square pan by lining it with parchment paper or greasing it.
  2. In a mixing bowl, whisk together the large eggs and avocado oil until frothy. If using erythritol, add it now and whisk until fully dissolved.
  3. Stir in the Greek yogurt until the mixture is smooth and well combined.
  4. In a separate bowl, whisk together almond flour, protein powder, baking powder, xanthan gum, and salt.
  5. Gradually combine the dry mixture into the wet ingredients, mixing gently to avoid overmixing.
  6. Pour the batter into your prepared pan and smooth the top. Bake for 50-55 minutes until golden brown and a toothpick comes out clean.
  7. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
