  • 1/4 cup Extra Virgin Olive Oil
For the Sauce
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Fresh Parsley Chopped

  2. Marinate the Chicken: Place the chicken breasts in the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes.
  3. Preheat the Pan: Heat a skillet over medium heat and add butter and olive oil.
  4. Mix the Dry Ingredients: In a separate bowl, whisk together all-purpose flour, kosher salt, and black pepper.
  5. Prep the Egg Mixture: In another bowl, whisk the eggs with water until well combined.
  6. Bread the Chicken: Dip each chicken breast into the flour mixture, then the egg mixture, and finish with a coating of panko breadcrumbs.
  7. Fry the Chicken: Carefully place the breaded chicken into the hot pan. Fry until golden brown on both sides, about 6-8 minutes per side.
  8. Make the Sauce: In a clean bowl, combine the remaining marinade, lemon juice, and chopped parsley.
