  3. Combine hot water, 1 tablespoon fresh lime juice, and salt in the saucepan, bringing it to a boil over medium-high heat.
  4. Stir in the rinsed rice, spreading it evenly across the pan. Cover tightly and reduce heat to low, then simmer for 18-20 minutes until the water is absorbed and the rice is tender.
  5. Rest the cooked rice off the heat, keeping it covered for another 10 minutes.
