Preparation
- Preheat the oven to 400°F.
- Whisk together olive oil, orange juice, lemon juice, honey, shallot, garlic, oregano, salt, and pepper until well combined.
- Slice the oranges and lemons thinly; cut the red onion into wedges.
- In a baking dish, arrange the citrus and onion, drizzling about ⅓ of the marinade over them and tossing to coat.
- Place the chicken breasts over the arranged citrus and pour the remaining marinade over them.
- Bake in the oven for 45 minutes, basting halfway with pan juices.
Serving
- Optional: Serve with a sprinkle of fresh herbs on top for an extra pop of color.
