- Combine the chicken with the juice of 2 lemons and 2 tablespoons of olive oil in a large bowl. Season with salt, black pepper, sumac, and allspice.
- Arrange the chicken in a roasting pan, placing the onion wedges and halved garlic heads around it.
- Drizzle the remaining olive oil over the chicken and sprinkle with za’atar.
- Pour the chicken stock or water into the pan.
- Roast for about 1 hour and 15 minutes or until cooked through.
- Rest the chicken for 10 minutes after removing it from the oven.
- Garnish with chopped parsley, toasted sliced almonds, and lemon wedges.
