How to Make Lemon Poppy Seed Muffins
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the melted butter, vegetable oil, eggs, sour cream, vanilla extract, almond extract, lemon zest, and lemon juice until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Gently fold in the poppy seeds and milk until the batter is smooth.
- Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.
