How to Make Lemon Poppy Seed Muffins
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the melted butter, vegetable oil, eggs, sour cream, vanilla extract, almond extract, lemon zest, and lemon juice until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Gently fold in the poppy seeds and milk until the batter is smooth.
  6. Pour the batter into the prepared muffin tin, filling each liner about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack.
