  • 1 cup Corn Tortilla Chips Crushed
  • 1 medium Yellow Onion Finely diced
  • 1 medium Green Bell Pepper Diced
  • 2 large Eggs Room temperature
  • 1 can Rotel Tomatoes Drained
  • 1 cup Canned Corn Drained
  • 1 packet Taco Seasoning
  • 1 cup Shredded Cheddar/Pepper Jack Cheese Divided
For Topping (Optional)
  • 1/2 cup Red Taco Sauce Adjust spice level as preferred
  • Cilantro or Parsley Optional garnish

How to Make Mexican Taco Meatloaf
  1. Preheat the oven to 350°F (175°C).
  2. Combine ground beef, crushed tortilla chips, diced onion, green bell pepper, whisked eggs, Rotel tomatoes, drained corn, taco seasoning, and 1 cup of cheese in a large bowl.
  3. Transfer the mixture to a 9×5-inch loaf pan, shaping it into a loaf.
  4. Bake for about 50 minutes, then sprinkle remaining cheese and drizzle with taco sauce. Bake for an additional 10-15 minutes.
  5. Rest the meatloaf for 10 minutes before slicing.
