For the Roasted Pepper Sauce
  • 2 cups Red Bell Peppers Yellow or orange peppers can be used as substitutes.
  • 3 tablespoons Olive Oil Avocado oil can be used if preferred.
  • 3 cloves Garlic Use fresh cloves for best flavor.
  • 2 tablespoons Lemon Juice White or apple cider vinegar can be used as substitutes.
Seasoning
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice the red bell peppers into strips, toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes.
  3. Allow the roasted peppers to cool slightly, then blend with minced garlic and lemon juice until smooth.
  4. Heat olive oil in a skillet over medium heat, cook tilapia fillets for 3-4 minutes on each side until golden brown.
  5. Pour the roasted pepper sauce over the cooked tilapia, and simmer for 1-2 minutes before serving.
