Steps

  2. Prep Ingredients: While noodles are cooking, chop the bok choy, onion, and garlic. Mix sauce ingredients in a bowl.
  3. Sauté Aromatics: Heat oil in a skillet, stir-fry onion until translucent (2-3 minutes). Add ginger, reduce heat, then stir in garlic.
  4. Cook Bok Choy Stems: Increase heat, toss in bok choy stems, stir-fry until tender (about 3 minutes).
  5. Combine Everything: Add cooked noodles and sauce to skillet, mix thoroughly. Add reserved pasta water if needed.
  6. Finish with Bok Choy Leaves: Stir in bok choy leaves, cook until just wilted, then serve hot.
