- Preheat your oven to 375°F (190°C) so it’s all set for the casserole.
- In a 10” cast iron skillet, brown the ground beef over medium heat. Stir occasionally and drain any excess grease.
- Stir in cream-style corn, frozen corn, diced tomatoes and green chilies, and taco seasoning. Cook for about 5 minutes.
- Generously sprinkle 1 cup of shredded cheddar cheese over the meat mixture.
- In a separate bowl, combine the Jiffy cornbread mix, eggs, and whole milk. Mix gently.
- Carefully pour the cornbread batter over the skillet mixture, spreading it evenly.
- Place the skillet in the oven and bake for 20-25 minutes, or until the cornbread is golden brown.
- Top with the remaining shredded cheddar cheese and bake for 5 more minutes.
- Allow the casserole to cool briefly before slicing.
