Ingredients
  

For the Filling
  • 1 lb Ground Beef Can substitute with ground turkey or shredded chicken
  • 1 can Cream-Style Corn Can use canned corn in a pinch
  • 1 cup Frozen Corn Fresh corn is ideal if in season
  • 1 can Diced Tomatoes and Green Chilies Use fresh tomatoes and jalapeños for a fresh kick
  • 2 tbsp Taco Seasoning Try homemade blends for a personal touch
  • 2 cup Shredded Cheddar Cheese Pepper jack can be used for a spicier flavor
For the Cornbread Topping
  • 1 box Jiffy Cornbread Mix Gluten-free cornbread mixes can also be used
  • 2 large Eggs Substitute with flax eggs for a vegan option
  • 1 cup Whole Milk Almond milk can be used for a dairy-free version

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) so it’s all set for the casserole.
  2. In a 10” cast iron skillet, brown the ground beef over medium heat. Stir occasionally and drain any excess grease.
  3. Stir in cream-style corn, frozen corn, diced tomatoes and green chilies, and taco seasoning. Cook for about 5 minutes.
  4. Generously sprinkle 1 cup of shredded cheddar cheese over the meat mixture.
  5. In a separate bowl, combine the Jiffy cornbread mix, eggs, and whole milk. Mix gently.
  6. Carefully pour the cornbread batter over the skillet mixture, spreading it evenly.
  7. Place the skillet in the oven and bake for 20-25 minutes, or until the cornbread is golden brown.
  8. Top with the remaining shredded cheddar cheese and bake for 5 more minutes.
  9. Allow the casserole to cool briefly before slicing.
