How to Make House Latkes With Horseradish
  1. Prep the Potatoes & Onions: Peel and grate the russet potatoes and yellow onion using a fine grater.
  2. Remove Moisture: Wring out the grated potato-onion mixture through a clean dish towel or cheesecloth.
  3. Mix Ingredients: Combine the dry potato-onion mixture with kosher salt, eggs, and matzo meal in a bowl. Form into small patties.
  4. Heat Oil: Heat canola oil in a skillet to 350°F.
  5. Fry Latkes: Drop patties into the hot oil, frying for about 5 minutes on each side until golden brown.
  6. Drain & Serve: Transfer latkes onto paper towels to drain excess oil. Keep warm in a low oven and top with horseradish sour cream before serving.
