How to Make Mexican Pizza
  1. Heat up vegetable oil in a large skillet over medium heat. Lightly fry each corn tortilla for about 2-3 minutes per side until they are crispy and golden brown. Drain them on paper towels, then sprinkle with salt for extra flavor.
  2. In a separate pan, warm 1 tablespoon of oil over medium heat. Add the ground beef and cook for 6-7 minutes, stirring until browned. Mix in taco seasoning and a bit of water, then let it simmer for 10 minutes to meld the flavors.
  3. On a baking sheet, place 8 tortilla shells as your base. Spread a layer of enchilada sauce on each one, followed by a layer of refried beans and seasoned taco meat. Top with more tortillas, drizzle with enchilada sauce, and sprinkle shredded cheese evenly over the top.
  4. Preheat your oven to 350°F (175°C). Bake the assembled pizzas for about 10 minutes, or until the cheese is deliciously melted and bubbly.
  5. Remove from the oven and add your favorite garnishes, then serve hot. Enjoy every crispy, cheesy bite!
