How to Make Mexican Pizza
- Heat up vegetable oil in a large skillet over medium heat. Lightly fry each corn tortilla for about 2-3 minutes per side until they are crispy and golden brown. Drain them on paper towels, then sprinkle with salt for extra flavor.
- In a separate pan, warm 1 tablespoon of oil over medium heat. Add the ground beef and cook for 6-7 minutes, stirring until browned. Mix in taco seasoning and a bit of water, then let it simmer for 10 minutes to meld the flavors.
- On a baking sheet, place 8 tortilla shells as your base. Spread a layer of enchilada sauce on each one, followed by a layer of refried beans and seasoned taco meat. Top with more tortillas, drizzle with enchilada sauce, and sprinkle shredded cheese evenly over the top.
- Preheat your oven to 350°F (175°C). Bake the assembled pizzas for about 10 minutes, or until the cheese is deliciously melted and bubbly.
- Remove from the oven and add your favorite garnishes, then serve hot. Enjoy every crispy, cheesy bite!

Notes
Optional: Add fresh cilantro or a dollop of sour cream on top for an extra burst of flavor. Store leftovers separately to maintain freshness and prevent sogginess.
