Ingredients
  

For the Cookies
  • 1 cup Unsalted Butter Room temperature
  • 4 oz Full Fat Cream Cheese Room temperature
  • 1 cup Granulated Sugar
  • 1 large Egg Room temperature
  • 1 tsp Almond Extract Optional, substitute with vanilla extract if desired
  • 2 tsp Vanilla Extract
  • 2.5 cups All-Purpose Flour Avoid over-packing
  • 2 tbsp Cornstarch
  • 0.5 tsp Fine Salt
  • 1 tsp Baking Powder
For the Frosting
  • 2 cups Powdered Sugar Sift beforehand
  • 0.5 cup Unsalted Butter Room temperature
  • 2-3 tbsp Heavy Whipping Cream Adjust to desired consistency
  • Gel Food Coloring Pink and black for decoration
  • Black Round Sprinkles Optional for decoration

Method
 

Making the Cookies
  1. Prepare the Dough: In a stand mixer, beat unsalted butter and full-fat cream cheese until smooth and creamy. Add granulated sugar, mixing until light and fluffy. Incorporate egg and extracts.
  2. Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour, cornstarch, fine salt, and baking powder. Gradually mix into the wet mixture until just combined.
  3. Chill the Dough: Divide the dough into two parts, wrap in plastic, and chill in the refrigerator for at least 1 hour.
  4. Roll and Cut Shapes: Preheat oven to 350°F (175°C). Roll out chilled dough on floured surface to about 1/3 inch thick. Use a bunny cookie cutter to cut shapes.
  5. Final Chill: Place cut-out cookies on baking sheet and chill in fridge for 15 minutes.
  6. Bake the Cookies: Bake cookies for about 10 minutes until edges are set. Let cool on baking sheets for 15 minutes.
  7. Prepare the Frosting: Beat unsalted butter until smooth. Gradually mix in powdered sugar and heavy whipping cream until desired consistency is reached.
  8. Decorate the Cookies: Frost each cooled cookie with white buttercream, then use gel food coloring and black round sprinkles to pipe bunny faces.
