For the Tapioca Base
  • 1 cup Sago (Tapioca Pearls) small pearl tapioca can be a substitute
  • 1 can Coconut Milk light coconut milk can be used for a lighter option
  • 1/2 cup Evaporated Milk use coconut milk or non-dairy milk for vegan
For the Sweetness
  • 1/4 cup Sugar coconut sugar can be used as a healthier alternative
For the Fruits
  • 1 cup Longan lychee or rambutan can be substituted
  • 1 cup Jackfruit use thin slices of fresh or canned jackfruit
For the Aromatics
  • 1 leaf Pandan Leaf or a few drops of pandan extract can be used

Method
 

How to Make Nam Wan
  1. Cook the tapioca pearls by boiling them in water for about 15 minutes. Stir occasionally until translucent, then let sit covered for 10 minutes. Drain and rinse under cold water.
  2. In a saucepan, simmer coconut milk, evaporated milk, sugar, and salt (and pandan leaf if using) over medium heat for 2–3 minutes until the sugar dissolves. Remove and cool, then chill.
  3. Prepare the fruit: Slice jackfruit and drain liquid from longan (if canned).
  4. Assemble in serving bowls: Layer cooked tapioca pearls, top with fruits, and pour chilled coconut milk mixture over. Serve cold.
  5. Optional: Garnish with fresh mint leaves.
