  • 2 cups cooked chicken breast shredded rotisserie chicken can be used
  • 4 cups mixed greens blend of spinach and romaine
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans
  • 1 medium avocado sliced or cubed
  • 1/4 cup cilantro chopped
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
  1. Start by dicing the cooked chicken breast into bite-sized pieces. If using shredded rotisserie chicken, fluff it up with a fork.
  2. In a large salad bowl, combine a generous handful of mixed greens.
  3. Gently fold in the halved cherry tomatoes, thinly sliced red onion, corn kernels, and black beans.
  4. Slice or cube the avocado and carefully add it to your salad.
  5. In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper.
  6. Drizzle the dressing over the salad mix, then toss gently.
  7. Serve immediately or allow it to chill for a few minutes.
