How to Make Cinnamon Roll Banana Bread
  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
  2. In a large bowl, mash the overripe bananas until smooth. Add the melted vegan butter, maple syrup, almond milk, and vanilla extract, stirring until creamy and well combined.
  3. In a separate bowl, whisk together the baking powder, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until everything is just combined.
  4. Carefully fold in the all-purpose flour and old-fashioned rolled oats, being cautious not to overmix.
  5. Pour half of the batter into the prepared pan. Spoon half of the cinnamon swirl mixture over the batter and swirl gently. Add the remaining batter, followed by the rest of the cinnamon swirl mixture, and swirl once more.
  6. Place the loaf pan in the preheated oven and bake for 50-60 minutes. Check for doneness with a toothpick.
