Ingredients
  

For the Chicken Skewers
  • 1 pound Boneless, skinless chicken breasts Chicken thighs can be used.
  • 3 tablespoons Olive oil Avocado oil can be substituted.
  • 2 tablespoons Lemon juice Lime juice can work as well.
  • 2 cloves Garlic, minced Fresh garlic is preferable.
  • 1 teaspoon Dried oregano Italian seasoning can be a substitute.
  • ½ teaspoon Paprika Smoked paprika is a flavorful alternative.
  • to taste Salt & black pepper Adjust according to taste.
  • Wooden skewers Soak in water for 30 minutes.
For the Feta Dip
  • 1 cup Feta cheese, crumbled Goat cheese can be an alternative.
  • ½ cup Plain Greek yogurt Sour cream can be used if yogurt is unavailable.
  • 1 tablespoon Olive oil
  • 1 teaspoon Lemon zest More lemon juice can be added if needed.
  • 1 tablespoon Lemon juice
  • 1 small clove Garlic, minced Adjust according to preference.
  • 1 tablespoon Fresh dill, chopped Parsley or mint can be used for variety.
For Serving
  • 1 package Warm pita bread Naan is a good substitute.
  • to taste Cherry tomatoes
  • to taste Sliced cucumbers
  • to taste Kalamata olives
  • to taste Roasted red peppers
  • to taste Fresh herbs Choose parsley, mint, or dill for garnish.

Method
 

Preparation
  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Whisk until well combined.
  2. Add the chicken cubes to the bowl and toss to coat them thoroughly in the marinade. Allow marinating for at least 30 minutes.
  3. Thread the marinated chicken pieces onto soaked wooden skewers, ensuring even spacing.
  4. Preheat your grill or grill pan to medium-high heat (around 400°F).
  5. Grill the skewers for 8-10 minutes, turning occasionally until golden and cooked through.
  6. In a blender, combine feta, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and dill. Blend until smooth.
  7. On a large serving board, arrange grilled chicken skewers alongside bowls of feta dip, olives, roasted peppers, cherry tomatoes, cucumbers, and warm pita.
  8. Sprinkle fresh herbs over the board before serving.
