How to Make White Lasagna Soup
  1. Brown the Sausage: In a large pot, cook the Italian sausage over medium heat until it’s nicely browned, about 5-7 minutes. Remove from the pot and set aside.
  2. Sauté Onions and Garlic: In the same pot, add onions and garlic. Sauté for about 3 minutes until softened and fragrant.
  3. Combine Broth and Beans: Pour in the chicken broth and add the white beans. Bring to a boil, then lower the heat and let it simmer gently for about 5 minutes.
  4. Stir in the Cream and Greens: Add the heavy cream, chopped spinach, ricotta, mozzarella, and Parmesan cheese to the pot. Stir well and let it simmer for an additional 5 minutes.
  5. Add Noodles: Gently toss in the broken lasagna noodles. Cook until tender, around 10 minutes.
