Preparation Steps
  1. Season the Chicken: Sprinkle kosher salt, pepper, garlic powder, smoked paprika, and oregano all over the chicken breasts.
  2. Cook the Chicken: Heat a skillet over medium heat and cook the seasoned chicken until fully cooked and golden brown, about 6-7 minutes per side.
  3. Combine the Salad Ingredients: In a large bowl, mix together the cooked pasta, sliced chicken, marinated artichoke hearts, pine nuts, shredded parmesan, and chopped fresh herbs. Gently toss to combine.
  4. Make the Vinaigrette: In a small bowl, whisk together lemon juice, champagne vinegar, dijon mustard, honey, lemon zest, minced garlic, salt, pepper, and extra virgin olive oil.
