Crust
  • 2 cups Oreo cookie crumbs
  • 1/2 cup Melted butter
Filling
  • 16 ounces Cream cheese room temperature
  • 1 cup Sugar
  • 3 large Eggs
  • 1 teaspoon Mint extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine the Oreo cookie crumbs and melted butter in a bowl. Mix until the crumbs are well-coated, then press this mixture into the bottom of a 9-inch springform pan to form a sturdy crust.
  3. Beat the cream cheese in a separate bowl until it’s smooth. Then, add the sugar, mixing until well combined.
  4. Incorporate the eggs one at a time, mixing well after each addition. Stir in the mint extract.
  5. Pour the creamy mixture over the prepared Oreo crust, spreading it evenly.
  6. Bake in the preheated oven for 30-35 minutes or until the center is set and slightly jiggly.
  7. Cool your bars at room temperature before refrigerating them for at least 2 hours.
