  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon poultry seasoning or substitute with salt, pepper, and garlic powder
  • 1 tablespoon olive oil or vegetable oil
For the Garlic Bread
  • 1 loaf Italian-style bread day-old preferred
  • 1/2 cup unsalted butter or olive oil
  • 3 cloves minced garlic or garlic powder
  • 2 tablespoons chopped parsley or basil, optional
  • 1/2 teaspoon crushed red pepper flakes adjust to taste
For the Alfredo Sauce
  • 1 cup heavy cream or half-and-half
  • 1/2 cup Parmesan cheese or asiago
  • 1 cup mozzarella cheese or cheddar

Method
 

Preparation
  1. Toss chicken pieces with olive oil and poultry seasoning. Cook in a skillet over medium heat until golden brown, about 5-7 minutes.
  2. Preheat your oven to 350°F (175°C). Combine melted butter, minced garlic, chopped parsley, and red pepper flakes in a bowl. Spread this mixture on bread halves and toast for 5-10 minutes until golden.
  3. In the same skillet, melt some butter over low heat. Sauté minced garlic briefly, then add heavy cream, Parmesan cheese, and parsley. Simmer until thickened, around 3-5 minutes.
  4. Spread half of the Alfredo sauce over toasted bread. Layer chicken pieces and sprinkle with mozzarella cheese. Top with remaining Alfredo sauce.
  5. Bake for about 5 minutes until cheese is melted and bubbly. Slice into portions and serve warm.
