  • 5-6 pounds Beef ribs trimmed
  • 1 tablespoon Ground cumin
  • 2 tablespoons Paprika
  • 2 tablespoons Garlic powder
  • 2 tablespoons Onion powder
  • 1 tablespoon Chili powder
  • ¼ cup Brown sugar packed
  • 2 tablespoons Smoked sea salt
  • 1 teaspoon Pepper
For the Barbecue Sauce
  • 1½-2 cups Ketchup
  • ⅓-½ cup Molasses
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Hot sauce to taste
  • Salt to taste
  • Pepper to taste
Optional Flavor Boosters
  • ¼-½ teaspoon Liquid smoke for smoky flavor
  • 2-4 tablespoons Yellow mustard or Dijon mustard
  • 2-4 teaspoons Garlic powder, onion powder, or chili powder
  • 2-4 tablespoons Worcestershire sauce
  • 1-2 chiles Jalapeño seeded and minced
  • 2-4 teaspoons Chipotle chile in adobo
  • 2-4 teaspoons Crushed red pepper flakes

Method
 

Instructions
  1. Preheat your grill or oven to 275°F, the ideal temperature for cooking ribs low and slow.
  2. Mix all the ingredients for the rib rub in a small bowl.
  3. Rub the spice mixture evenly over the beef ribs, massaging it into the meat.
  4. Prepare the barbecue sauce by combining all the sauce ingredients in a saucepan. Cook over medium heat.
  5. Customize your barbecue sauce with any optional ingredients, stirring well.
  6. Cook the ribs on the grill or in the oven for about 3-4 hours until fork-tender.
  7. Brush the ribs with barbecue sauce during the last 20 minutes of cooking.
  8. Rest the ribs for a few minutes after cooking to retain juices.
