  • 1 teaspoon red pepper flakes adjust to taste
  • ¾ cup tomato paste canned or tube
  • 2 cups tomato purée or passata
  • 2 cups vegetable broth or chicken broth
  • ¾ teaspoon salt season to taste
For the Pasta
  • 10 ounces spaghetti or linguine
For the Topping
  • 1 cup burrata optional, for creaminess

Directions
  1. In a large skillet, warm 3 tablespoons of extra virgin olive oil over medium heat until it shimmers.
  2. Toss in your halved garlic and red pepper flakes, letting them cook for about 1 minute until aromatic.
  3. Stir in ¾ cup of tomato paste, cooking it until it darkens slightly—about 1 minute.
  4. Pour in 2 cups of tomato purée, 2 cups of vegetable broth, and ¾ teaspoon of salt, then add 10 ounces of spaghetti. Stir to combine.
  5. Cover the skillet and let it simmer for 8 to 12 minutes, stirring occasionally.
  6. Serve straight from the pan, finishing with a drizzle of extra virgin olive oil and topping with burrata.
