- Preheat your grill or stovetop pan to medium heat.
- Mix the cream cheese, minced jalapeño, crumbled bacon, and half of the sharp cheddar cheese in a bowl. Season with salt and black pepper to taste.
- Slice each beef hot dog lengthwise, ensuring not to cut all the way through. Fill each hot dog with the prepared cream cheese mixture.
- Grill the stuffed hot dogs for about 5-7 minutes, turning them occasionally until heated through and charred.
- Transfer the grilled hot dogs into the soft hot dog buns. Top each one with remaining sharp cheddar cheese and additional jalapeños if desired.
- Garnish with chopped fresh cilantro if using. Serve immediately.
