Ingredients
  

Base
  • 2 tbsp Olive Oil can substitute with vegetable oil
  • 0.5 cup Onion, finely diced yellow or white onions work best
  • 4 cloves Garlic, minced garlic powder can be an alternative
  • 0.5 cup Carrots, peeled and diced can substitute with parsnips
  • 0.5 cup Celery, diced leeks make a great alternative
Broth
  • 1 can Red Kidney Beans, drained and rinsed black beans or chickpeas are good substitutes
  • 14.5 oz Diced Tomatoes, with juice fresh tomatoes are a tasty replacement
  • 1.5 tsp Italian Seasoning dried basil and oregano can work as alternatives
  • 1 Bay Leaf omit if unavailable or use dried thyme
  • 4 cups Vegetable Stock homemade stock enhances flavor
Veggies
  • 0.5 cup Green Beans, fresh or frozen peas can be substituted if desired
  • 1 Zucchini, halved and diced yellow squash makes a delightful alternative
  • 2 cups Fresh Baby Spinach swap with kale for extra boost
Pasta
  • 0.5 cup Ditalini Pasta any small pasta shape like elbow macaroni works
Seasoning
  • Salt and Pepper adjust according to dietary needs

Method
 

Instructions
  1. Heat olive oil in a large stockpot over medium heat. Add diced onions and sauté until translucent, about 3-5 minutes.
  2. Add minced garlic and cook briefly until fragrant.
  3. Stir in diced carrots and celery. Continue sautéing until tender, about 4-5 minutes.
  4. Add kidney beans, diced tomatoes (with juice), Italian seasoning, bay leaf, and vegetable stock. Season with salt and pepper.
  5. Bring to a gentle simmer and cook for about 15 minutes, allowing vegetables to soften and flavors to meld.
  6. Mix in green beans, zucchini, spinach, and ditalini pasta. Cook until pasta is tender, about 10 minutes.
  7. Taste and adjust seasoning if necessary. Remove bay leaf before serving.
