  • 2 cups Gluten-Free Pasta
  • 1/2 cup Onions, diced Use red or white as preferred
  • 3/4 cup Bell Pepper, chopped Any color
  • 1 cup Black Beans, cooked Canned recommended for convenience
  • 3/4 cup Corn Frozen or fresh
For the Dressing
  • 3 cloves Garlic, pressed Fresh preferred
  • 1 1/4 cups Vegenaise Can substitute with avocado
  • 1 tablespoon Southwest Seasoning Homemade blend suggested

Method
 

How to Make Southwest Pasta Salad
  1. Boil the gluten-free pasta according to package instructions. Drain and rinse under cold water.
  2. In a bowl, mix together the black beans, corn, diced onions, and chopped bell pepper.
  3. In another bowl, whisk together the southwest seasoning, pressed garlic, and vegenaise until smooth.
  4. In a mixing bowl, combine the cooled pasta with the veggie mixture. Pour the dressing over and toss gently.
  5. Optional: Garnish with fresh cilantro before serving.
